There’s a lot of buzz these days about the best way to measure ingredients for baking. Here in the US, we use mainly units of volume: cups, fluid ounces, teaspoons, tablespoons. For most of us, we grew up helping our family in the kitchen, scooping cups of flour for pancakes, biscuits, cookies, etc. It’s nostalgic for so many of us. Aaaand it’s the worst way to measure ingredients for baking.
I know, I know, harsh-sounding isn’t it? Sometimes the truth is like that. Here’s the thing, there’s a better, more efficient way to measure ingredients. Hold on, let me climb up on my soapbox so you can really hear me: THERE’S A BETTER WAY, Y’ALL! It’s called grams. No measuring cups needed and no confusing fractions to mess with.
You might be thinking, "but what about ounces and pounds? They are by weight, too!" Even ounces and pounds can be confusing. For starters, there are too many fractions involved, and sometimes it's hard to figure out if a recipe is asking for fluid ounces or weight.
Let’s take a closer look at why measuring by weight in grams is the absolute best way.
Measuring in grams is more accurate and yields more consistent results.
Can I get an Amen?
There are already so many variables in baking that can alter the final product, measuring ingredients doesn’t have to be one of them.
When you measure by weight, 200 grams of flour is 200 grams of flour. When measuring by volume, one cup of flour isn’t always going to weigh the same every time. HOW the flour gets put into the measuring cup can greatly impact the actual amount of flour going into the recipe.
Weighing in grams is precise and accurate, no special instructions for how to scoop it. All you need is a bowl and a kitchen scale.
Baking is a science, so details and measurements are paramount to the final result coming out correctly.

Taking measuring cups out of the baking equation also means fewer dishes to wash.
I’ve made countless recipes that call for a ¼ cup of this, a ¼ cup of that, and a ¼ cup of something else, meaning I had to wash and dry the measuring cup between each ingredient.
When measuring ingredients involves only a bowl and a digital scale, you don’t have to spend time searching for measuring cups and pitchers and won’t have to worry about the headache of dishes to follow. I’ve literally never heard someone say they love washing more dishes. Fewer dishes= less work= more time actually baking.
Scaling a recipe up or down just got a whole lot easier.
Have you ever tried to figure out how to divide a recipe that has ⅓ cup of something in it? I'd rather claw my eyeballs out. It’s not naturally easy or fun to do. Before measuring recipes by weight, I used to get so frustrated when I’d try to adjust the size of a recipe. Too much math. Too many fractions. No thank you.
It doesn’t have to be so hard!
Recipes in grams are SO EASY to scale up and down. Just divide or multiply the numbers. That’s it.
Listen, I am not here to shame anyone into using a scale. I understand the nostalgia and comfort of using volumetric measurements. If a scale is just not for you, I totally respect that. You do you.
For me, I choose to post all of my recipes in grams and use weight measurement as the foundation for my baking. Once you get the hang of it, you’ll see just how easy it is to set yourself up for success.
Don’t throw out your measuring cups!
Measuring cups will come in handy whenever you want to convert a recipe from volume to grams, so breathe a sigh of relief, you don’t need to part with them.
